Welcome to the forum...A hard question..The best is what serves you well and you are fully confident in. Price doesn't always spell it out.
For example my best chopper I have is a 15 dollar Cold steel machete. I have other more expensive knives and I have used most but I would chose the CS over them all for camping and outdoors use. For me it does the best.
It depends on what you want to use it for. Are you looking for a chopper or a tactical service knife or a knife to simply cut food ?
There is no all around best knife. The choppers are big and don't handle delicate tasks well like preparing food. Smaller fixed blades 3 to 4" don't make good choppers.
I guess if you want to spend a lot of money chose a Busse for a fixed blade. People seem to really like them.
The folder part of the question I can't answer. I only own one folder a Spyderco Endura. Folders are not my first choice for a knife because of the design. I prefer a smaller fixed blade in it's place.
Sorry If I didn't answer your questions. I just don't want to give you a bunch of BS. I'm not really partial to any one brand of knife. If I like it. I like it.

recently discovered the website of that american cutlery corner network. hehe heard it was funny to watch the show and since its an american show i watched a feed online. i where about to make a joke i would buy all those great bowies and swords. dragon swords.. ninja swords. hmmm yeah. but even i cant take that seriously. what quality are those items they have up for sale anyway? are they all as crappy as the funny topic about that advertisement show where that guy breaks that "amazing" sword and gets hit by it? i know its off topic.. just curious |

I have never bought any of those knives and I probably never will. The knives are for show-in-tell I guess. Some times they have a few lesser known name brands for sell. The other stuff is just china brand. They have done a few cutting tests on air with these knives and yes they will cut but as far as them being tough and rugged I doubt it. |

I just got a Busse Badger Attack - Its about as versatile a fixed blade as I've ever had - and of course its INFI steel. I got an Okuden sheath made for it - it rocks! For folders, I'm going to have to say that my Benchmade Emereson CQC7 is the best that I've used, but I know that there are better out there. Anyways, here's the Busse:

They aren't really custom.. They make certain designs at certain times. They go from one to the next.. It's not like cold Steel where they have a continues product line. They don't make folders that I have ever seen. |

For some killer knives if money was no object check out Shiva Ki knives www.Shivakicustomknives.com He was retired for a long while, but for the time being he is making knives again. I love the big Spirit blade, The Gun-Ho and the Fighting Bowie and the Mercinary. They are all pricey (not like art daggers/knives, but still). from $1,200 to $3,800 is pricey (although he has blades that are closer to production prices too. there are interesting links to old knife review articles. There is also an interesting blade on blade fighting knife made designed by James Keating CROSSADA FIGHTING KNIFE that looks real interesting. A lot cheaper than a Shiva Ki. www.szaboinc.com has some knarly looking knives, including the Crossada and a massive "Szabowie" that looks wicked. All my serious knife use has been with Cold Steel (only ones I have used so far that I would go out of my way to reccomend) I have a bunch of other manufacturer knives that have either been broken, or retired. My Cold Steel Trailmaster Bowie in SanMai has been heavily used and I am pleased with it. They make one in carbon steel that is very affordable too and I am sure will perform just as well as the more expensive sanmai |

The cold steel Recon folder is a very economical priced folder that is nasty strong. I have had one for 6 years and use it every day. My good friend wanted one (he saw me using mine at work every day) and bought one of the Tanto point recon folders. He went up in the mountains in winter and locked his keys in his "jallopie" crappy car. He was about to break the window with the knife, but decided to try and force the lock first with the knife so he would not have to drive all the way home in the sub-zero weather with no window. He put the tip in the lock, leaned in with all his weight behind and turned the knife as hard as he could. He heard a snap and looked down kinda of expecting a broken tip, instead he had popped the lock and the door opened....even crazier the blade was not really damaged at all. Later that same winter he again locked his keys in the same crappy car and used the same knife to actually cut through and pry the metal door panel open to reach the latch (because he had already stripped the lock out with the earlier break in) so he came to work with a big tear in the side of his door panel. the total damage to the knife was a some very small scratches on the black finish, and I had to touch up the tip's edge for him on my sharpener.
also addressing Zylon's "are they all as crappy as the funny topic about that advertisement show where that guy breaks that "amazing" sword and gets hit by it? i know its off topic.." as for Zylon comment about the breaking sword I have seen that clip and I laugh every time I think of it. what is so funny about that clip is that the guy is all "this is a tough sword" and kinda tapping it on the spine and it breaks in half and stabs him and he fall over .....what makes it even funnier (besides his sweet hillbilly accent) is that no one helps him, his co-host just keeps on talking and selling the "great" swords. be sure if you ever buy a sword to actually use never buy a stainless steel one..... |

I think Swamp Rat knives use to make a folder.
The prices of those knives is outrages! I couldn't imagine spending that knid of money on a knife. I don't see 1,200 to 3,800 worth of knives there. I don't care what they are made of. |
